Ingredients:
For the Durian Component:
- Flesh of 1 ripe durian, seeded and mashed (or durian pulp)
For the Es Campur:
- 1 cup sweetened condensed milk
- 1 cup coconut milk
- 2 cups shaved ice or crushed ice
- 1/2 cup grass jelly (cincau), cubed
- 1/2 cup cooked red beans, chilled
- 1/2 cup sweetened condensed milk, for drizzling
- 1/2 cup diced jackfruit (optional)
- 1/2 cup diced avocado (optional)
- 1/2 cup diced young coconut meat (optional)
- 1/4 cup nata de coco (coconut jelly), drained (optional)
- 1/4 cup tapioca pearls, cooked and chilled (optional)
- 1/4 cup palm sugar syrup (or simple syrup), for drizzling
Instructions:
Prepare the Durian Component:
- Remove the seeds from the ripe durian and scoop out the flesh. Mash the durian flesh using a fork or potato masher until smooth. Set aside.
Prepare the Es Campur:
- In a small bowl, mix together the sweetened condensed milk and coconut milk until well combined. This will be the base for your Es Campur.
Assemble the Es Campur Durian:
- In serving glasses or bowls, place a few spoonfuls of mashed durian at the bottom of each container.
- Add a layer of shaved ice or crushed ice on top of the durian.
- Add the cubed grass jelly, cooked red beans, diced jackfruit, diced avocado, diced young coconut meat, nata de coco, and tapioca pearls on top of the ice.
