LEMPER SUPER - Traditional Indonesian snack
Lemper is a traditional Indonesian snack made from sticky rice filled with seasoned shredded chicken, beef, or fish, wrapped in banana leaves, and then steamed. Here's a recipe to make Lemper:
Ingredients:
For the Sticky Rice:
- 2 cups glutinous rice (sticky rice)
- 2 cups coconut milk
- 1 pandan leaf, tied into a knot (optional)
- 1 teaspoon salt
For the Filling:
- 300g boneless, skinless chicken thighs (or use shredded cooked chicken)
- 2 cloves garlic, minced
- 2 shallots, minced
- 1 teaspoon ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon salt
- 1 tablespoon vegetable oil
- Banana leaves, cut into rectangles and lightly wilted over a flame to make them pliable
Instructions:
Prepare the Sticky Rice:
- Rinse the glutinous rice under cold water until the water runs clear. Drain well.
- In a pot, combine the glutinous rice, coconut milk, pandan leaf (if using), and salt. Stir well.
- Cook the rice mixture over medium heat, stirring occasionally, until the coconut milk is absorbed and the rice is cooked and sticky. Remove from heat and let it cool slightly.
Prepare the Filling:
- If using raw chicken thighs, boil them in water until cooked through. Once cooked, shred the chicken using two forks or your hands.
- In a pan, heat the vegetable oil over medium heat. Add the minced garlic and shallots, and sauté until fragrant.
- Add the shredded chicken to the pan, along with the ground coriander, ground turmeric, and salt. Stir well to combine and cook for a few minutes until the chicken is well coated with the spices. Remove from heat and let it cool.
Assemble the Lemper:
- Take a piece of banana leaf and place about 2 tablespoons of the sticky rice onto the center of the leaf. Flatten the rice slightly into a rectangle shape.
- Place a spoonful of the chicken filling onto the center of the rice rectangle.
- Roll the banana leaf tightly around the rice and filling, forming a cylindrical shape. Fold the ends of the banana leaf to secure the filling inside.
- Repeat the process with the remaining rice and filling.
Steam the Lemper:
- Arrange the wrapped Lemper in a steamer basket, seam side down, making sure they are not overcrowded.
- Steam the Lemper over boiling water for about 20-25 minutes, or until heated through and the banana leaves are tender.
Serve:
- Once cooked, let the Lemper cool slightly before serving. You can serve them warm or at room temperature.
- To eat, unwrap the Lemper from the banana leaves and enjoy!
