KUE LAPIS LEGIT - Indonesian Layer Cake or Spekkoek


 

Lapis Legit, also known as Indonesian Layer Cake or Spekkoek, is a rich and decadent cake with multiple layers. Here's a recipe to make Lapis Legit:

Ingredients:

  • 500g unsalted butter, softened
  • 250g granulated sugar
  • 12 large eggs, separated
  • 200g all-purpose flour
  • 100g condensed milk
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • Butter or vegetable oil, for greasing the pan

Instructions:

  1. Preheat the Oven:

    • Preheat your oven to 160°C (325°F). Grease a 9x9 inch square cake pan or a rectangular pan with butter or vegetable oil, and line the bottom with parchment paper.
  2. Prepare the Batter:

    • In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
    • Add the egg yolks one at a time, mixing well after each addition.
    • Gradually add the condensed milk and vanilla extract to the mixture, and continue mixing until well combined.
  3. Add Dry Ingredients:

    • Sift the all-purpose flour, ground cinnamon, ground nutmeg, and salt together.
    • Gradually add the sifted dry ingredients to the butter mixture, mixing until smooth and well incorporated.
  4. Beat Egg Whites:

    • In a separate clean mixing bowl, beat the egg whites until stiff peaks form.
  5. Fold in Egg Whites:

    • Gently fold the beaten egg whites into the batter using a spatula until no streaks of egg whites remain. Be careful not to overmix, as this can deflate the batter.
  6. Layer the Cake:

    • Pour a thin layer of batter (about 1/4 inch thick) into the prepared cake pan and spread it evenly using a spatula.
    • Place the pan in the preheated oven and bake for about 5-7 minutes, or until the top is set and lightly golden.
  7. Repeat:

    • Remove the pan from the oven and pour another thin layer of batter over the baked layer. Spread it evenly and return the pan to the oven.
    • Continue this process, alternating between baking thin layers of batter and spreading them evenly, until all the batter is used up. This will create the distinct layers of the Lapis Legit.
  8. Bake:

    • Once all the layers are added, bake the cake in the preheated oven for about 40-50 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  9. Cool and Serve:

    • Remove the cake from the oven and let it cool completely in the pan before slicing.
    • Once cooled, carefully slice the Lapis Legit into thin layers using a sharp knife.
    • Serve and enjoy your delicious homemade Lapis Legit!

Note: The process of layering and baking the cake can be time-consuming, but the result is worth it! You can also customize the flavor by adding different spices or extracts to the batter.
