SOTO KUDUS - Traditional Indonesian Soup



 Soto Kudus is a traditional Indonesian soup originating from the city of Kudus in Central Java. It's typically made with a clear broth flavored with various spices and served with shredded chicken or beef, vegetables, and rice or noodles. Here's a basic recipe to make Soto Kudus:

Ingredients:

  • 500g chicken breasts or thighs, cooked and shredded
  • 2 liters water
  • 2 stalks lemongrass, bruised
  • 4 kaffir lime leaves
  • 2 bay leaves
  • 3 cloves garlic, minced
  • 2 shallots, minced
  • 1-inch ginger, thinly sliced
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • Salt and pepper to taste
  • 200g bean sprouts, blanched
  • 2 boiled eggs, halved
  • 2 tablespoons fried shallots, for garnish
  • Cooked rice or rice noodles, for serving
  • Lime wedges, for serving
  • Sambal or chili paste, for serving (optional)

Instructions:

  1. In a large pot, bring the water to a boil. Add shredded chicken, lemongrass, kaffir lime leaves, and bay leaves. Reduce heat to low and let it simmer for about 20-30 minutes to allow the flavors to meld.

  2. While the broth is simmering, prepare the spice paste. In a mortar and pestle or food processor, grind together garlic, shallots, ginger, ground turmeric, coriander, and cumin to form a smooth paste.

  3. Heat some oil in a pan over medium heat. Add the spice paste and sauté until fragrant, about 2-3 minutes.

  4. Add the sautéed spice paste to the simmering broth. Season with salt and pepper to taste. Let it simmer for another 10-15 minutes.

  5. Once the broth is ready, discard the lemongrass, kaffir lime leaves, and bay leaves. Adjust the seasoning if needed.

  6. To serve, place some cooked rice or rice noodles in serving bowls. Ladle the hot broth over the rice or noodles. Top with shredded chicken, blanched bean sprouts, boiled eggs, and fried shallots.

  7. Serve Soto Kudus hot with lime wedges and sambal/chili paste on the side, if desired. Enjoy your delicious Indonesian soup!
