AYAM TALIWANG PEDAS - SPICY TALIWANG CHICKEN


 

Ayam Taliwang is a traditional spicy grilled chicken dish from Lombok, Indonesia. It's known for its bold flavors, typically prepared with chicken marinated in a spicy mixture and then grilled to perfection. Here's a recipe to make Ayam Taliwang:

Ingredients:

For the Chicken Marinade:

  • 1 whole chicken, cut into pieces (or chicken thighs and drumsticks)
  • 5 shallots, peeled and roughly chopped
  • 4 cloves garlic, peeled and roughly chopped
  • 5 red chili peppers (adjust to taste), roughly chopped
  • 2 bird's eye chili peppers (optional, for extra heat)
  • 1 teaspoon shrimp paste (terasi or belacan)
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon salt
  • 2 tablespoons coconut oil (or cooking oil)
  • Juice of 1 lime or lemon

For Grilling:

  • Banana leaves or aluminum foil (if banana leaves are not available)
  • Cooking oil, for brushing

For Serving:

  • Sambal terasi (Indonesian chili paste with shrimp paste)
  • Sliced cucumber and tomatoes
  • Lime wedges

Instructions:

  1. Prepare the Chicken Marinade:

    • In a blender or food processor, combine the shallots, garlic, red chili peppers, bird's eye chili peppers (if using), shrimp paste, ground turmeric, ground coriander, salt, coconut oil, and lime or lemon juice. Blend until you get a smooth paste.
  2. Marinate the Chicken:

    • Place the chicken pieces in a large bowl and rub them thoroughly with the marinade paste, ensuring that each piece is evenly coated. Cover the bowl and let the chicken marinate in the refrigerator for at least 2 hours, or preferably overnight, to allow the flavors to penetrate.
  3. Preheat the Grill:

    • If using a charcoal grill, preheat it to medium-high heat. If using a gas grill, preheat to medium-high.
  4. Prepare the Grill and Chicken for Cooking:

    • If using banana leaves, quickly pass them over an open flame to soften and make them pliable. Place a piece of banana leaf on a flat surface and brush it lightly with cooking oil. Alternatively, if using aluminum foil, lightly grease it with cooking oil.
    • Place the marinated chicken pieces on the prepared banana leaves or aluminum foil.
  5. Grill the Chicken:

    • Place the chicken on the preheated grill, directly over the heat. Grill the chicken for about 20-25 minutes, turning occasionally, or until the chicken is cooked through and has a nice charred exterior. Baste the chicken with any remaining marinade during grilling to keep it moist and flavorful.
  6. Serve:

    • Once the chicken is cooked, transfer it to a serving platter.
    • Serve the Ayam Taliwang hot, accompanied by sambal terasi, sliced cucumber and tomatoes, and lime wedges on the side. The refreshing cucumber and tomatoes help balance the heat of the spicy chicken.
