Bubur Manado

Ingredients:
For the Porridge:
- 1 cup rice
- 1/2 cup glutinous rice (sticky rice), soaked for 1 hour
- 6 cups water or chicken broth
- 1 corn on the cob, kernels removed
- 1 cup pumpkin or butternut squash, diced
- 1 cup sweet potato, diced
- 1 cup cassava, diced
- 1 cup green beans, chopped
- 1 cup spinach or kangkung (water spinach), chopped
- 1 cup bean sprouts
- 1 cup chayote squash, diced
- Salt to taste
For the Condiments:
- Fried shallots
- Sambal (Indonesian chili paste)
- Lime wedges
Instructions:
Prepare the Porridge Base:
- In a large pot, combine the rice, soaked glutinous rice, and water or chicken broth. Bring to a boil over medium heat, then reduce the heat to low and let it simmer, stirring occasionally, until the rice is soft and the mixture thickens to a porridge consistency, about 30-40 minutes.
Add Vegetables:
- Add the corn kernels, pumpkin or squash, sweet potato, cassava, and green beans to the porridge. Cook for another 10-15 minutes until the vegetables are tender.
Add Leafy Greens and Bean Sprouts:
- Stir in the spinach or kangkung and bean sprouts. Cook for an additional 5 minutes until the greens are wilted and the bean sprouts are tender-crisp.
Seasoning:
- Season the porridge with salt to taste. Adjust the seasoning as needed.
Serve:
- Ladle the Bubur Manado into serving bowls.
- Serve hot, garnished with fried shallots and accompanied by sambal and lime wedges on the side.
