KUE CUBIT - Traditional Indonesian Snack
Kue Cibut is a traditional Indonesian snack made from glutinous rice flour and coconut milk, similar to a pancake. It's often served as a sweet treat or snack. Here's a recipe to make Kue Cibut:
Ingredients:
- 200g glutinous rice flour
- 100g rice flour
- 200ml thick coconut milk
- 100g granulated sugar
- 1/4 teaspoon salt
- Pandan leaves (optional, for flavor and color)
- Water, as needed
- Oil, for greasing the pan
Instructions:
Prepare the Batter:
- In a mixing bowl, combine the glutinous rice flour, rice flour, granulated sugar, and salt. Mix well.
- Gradually add the thick coconut milk to the flour mixture while stirring continuously. Mix until you get a smooth batter. If the batter is too thick, you can add a little water to achieve a pouring consistency.
- If using pandan leaves for flavor and color, you can blend them with a little water and strain the juice to add to the batter.
Heat the Pan:
- Grease a non-stick frying pan or griddle with a little oil and place it over medium heat.
Cook the Kue Cibut:
- Once the pan is hot, pour a ladleful of the batter onto the pan and spread it out into a thin layer using the back of the ladle. You can make the Kue Cibut as big or small as you like, depending on your preference.
- Cook the Kue Cibut for about 2-3 minutes, or until the edges start to lift and the surface appears dry. Avoid flipping the Kue Cibut over, as it's meant to be cooked on one side only.
Repeat and Serve:
- Repeat the process with the remaining batter until all the Kue Cibut are cooked.
- Once cooked, remove the Kue Cibut from the pan and let them cool slightly.
- Serve the Kue Cibut warm as a sweet snack or dessert.
