NASI KUNING - INDONESIAN YELLOW RICE


 Nasi Kuning, or Indonesian Yellow Rice, is a fragrant and flavorful dish traditionally served during special occasions and celebrations in Indonesia. It gets its vibrant yellow color from turmeric and is often accompanied by various side dishes. Here's a recipe to make Nasi Kuning:

Ingredients:

  • 2 cups jasmine rice
  • 2 1/2 cups coconut milk
  • 1 1/2 cups water
  • 2 teaspoons turmeric powder
  • 1 pandan leaf, tied into a knot (optional)
  • 2 bay leaves
  • 1 lemongrass stalk, bruised
  • 1 teaspoon salt
  • 1 tablespoon oil

Instructions:

  1. Rinse the Rice:

    • Wash the jasmine rice in cold water until the water runs clear. Drain well and set aside.
  2. Prepare the Coconut Milk Mixture:

    • In a bowl, mix the coconut milk, water, turmeric powder, and salt until well combined. Set aside.
  3. Cook the Rice:

    • In a large pot or rice cooker, heat the oil over medium heat. Add the pandan leaf (if using), bay leaves, and bruised lemongrass stalk. Cook for a minute or until fragrant.
    • Add the drained rice to the pot and stir to coat it with the oil and spices.
    • Pour in the coconut milk mixture and stir well to combine.
    • Cover the pot and cook the rice according to your rice cooker's instructions or bring it to a boil, then reduce the heat to low and simmer for about 15-20 minutes, or until the rice is cooked and the liquid is absorbed.
  4. Steam the Rice (Optional):

    • If you prefer a more compact and slightly sticky texture for your Nasi Kuning, you can let the rice steam for an additional 10-15 minutes after it's done cooking. Remove the pot from the heat, keep it covered, and let it steam.
  5. Serve:

    • Once the rice is cooked, fluff it with a fork to separate the grains and remove the pandan leaf, bay leaves, and lemongrass stalk.
    • Transfer the Nasi Kuning to a serving platter or individual plates.
    • Serve hot alongside your favorite Indonesian side dishes such as fried chicken, beef rendang, fried tempeh, sambal, fried anchovies, hard-boiled eggs, and fresh cucumber slices.
