PLECING KANGKUNG - Indonesian dish originating from the island of Lombok
Plecing Kangkung is a popular Indonesian dish originating from the island of Lombok. It's made with water spinach (kangkung) and served with a spicy sambal (chili paste) dressing. Here's a simple recipe to make Plecing Kangkung:
Ingredients:
For the Plecing Kangkung:
- 1 bunch water spinach (kangkung), washed and trimmed
- 2 tomatoes, sliced
- 2 small cucumber, sliced
- 1 small red onion, thinly sliced
- 1 lime, cut into wedges
- Fried shallots, for garnish (optional)
For the Sambal (Chili Paste) Dressing:
- 5-6 red chilies, seeded and chopped (adjust to taste)
- 3 shallots, chopped
- 2 cloves garlic, chopped
- 1 teaspoon shrimp paste (terasi), toasted
- 1 tablespoon palm sugar or brown sugar
- 1 tablespoon tamarind paste, dissolved in 2 tablespoons warm water
- Salt to taste
Instructions:
Blanch the Water Spinach:
- Bring a pot of water to a boil. Blanch the water spinach (kangkung) in boiling water for about 1-2 minutes, until it turns bright green and tender. Do not overcook.
- Remove the water spinach from the pot and immediately plunge it into a bowl of ice water to stop the cooking process. Drain well and set aside.
Prepare the Sambal (Chili Paste) Dressing:
- In a mortar and pestle or food processor, grind together the chopped red chilies, shallots, garlic, and toasted shrimp paste (terasi) until you get a smooth paste.
- Transfer the chili paste to a small bowl. Add palm sugar, tamarind water, and salt to taste. Mix well until the sugar is dissolved. Adjust the seasoning according to your taste preference.
Assemble the Plecing Kangkung:
- Arrange the blanched water spinach on a serving plate. Top with sliced tomatoes, cucumbers, and thinly sliced red onion.
- Drizzle the prepared sambal dressing over the vegetables, ensuring they are evenly coated with the spicy sauce.
Garnish and Serve:
- Garnish the Plecing Kangkung with fried shallots, if desired.
- Serve with lime wedges on the side.
