Rendang


 

Certainly! Rendang is a traditional Indonesian dish known for its rich and complex flavors. Here's a basic recipe for making beef rendang:

Ingredients:

  • 2 lbs (about 1 kg) beef, preferably chuck or round, cut into cubes
  • 4 shallots, finely chopped
  • 4 cloves garlic, minced
  • 1-inch piece of ginger, grated
  • 2 stalks lemongrass, outer layer removed, bruised
  • 4 kaffir lime leaves
  • 2 cups thick coconut milk
  • 1 cup water
  • Salt, to taste
  • 2 tablespoons tamarind paste
  • 2 tablespoons palm sugar (or brown sugar)
  • Cooking oil

Spice Paste (Rendang Paste):

  • 6-8 dried red chilies, soaked in hot water and deseeded
  • 5 shallots, peeled
  • 3 cloves garlic, peeled
  • 1-inch piece of ginger, peeled
  • 1-inch piece of galangal, peeled
  • 1 tablespoon coriander seeds
  • 1 tablespoon cumin seeds
  • 1 teaspoon turmeric powder
  • 1 teaspoon ground black pepper
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cinnamon

Instructions:

  1. Prepare the Spice Paste: In a food processor or mortar and pestle, grind all the ingredients for the spice paste into a smooth paste. If needed, you can add a little water to facilitate blending.

  2. Cooking the Rendang: Heat some oil in a large, heavy-bottomed pot over medium heat. Add the spice paste, shallots, garlic, and ginger. Cook, stirring frequently, until fragrant, about 5-7 minutes.

  3. Add Beef and Lemongrass: Add the beef cubes to the pot and cook until they are browned on all sides, about 5 minutes. Then add the bruised lemongrass and kaffir lime leaves.

  4. Coconut Milk Mixture: Pour in the coconut milk and water. Bring the mixture to a simmer, then reduce the heat to low. Let it cook uncovered, stirring occasionally, for about 1 hour.

  5. Add Tamarind Paste and Sugar: After an hour, add the tamarind paste, palm sugar, and salt to taste. Stir well to combine.

  6. Slow Cooking: Continue cooking the rendang over low heat, stirring occasionally to prevent sticking, until the sauce has thickened and the beef is tender, about 2-3 hours. The longer you cook it, the more flavorful it will become.

  7. Finishing Touch: Once the sauce has thickened and the beef is tender, taste and adjust the seasoning if needed. Remove the lemongrass stalks and kaffir lime leaves before serving.

  8. Serving: Serve the beef rendang hot with steamed rice or coconut rice. It's also delicious with some sambal or pickled vegetables on the side.
