RUJAK CINGUR
Rujak Cingur is a traditional Indonesian salad from East Java, particularly Surabaya. It's a unique combination of fresh fruits and vegetables with beef snout (cingur) served with a spicy peanut sauce. Here's a recipe for making Rujak Cingur:
Ingredients:
For the Salad:
- 200g beef snout (cingur), boiled and thinly sliced
- 1 cucumber, peeled and julienned
- 1 green mango, peeled and julienned
- 1 raw mango, peeled and julienned
- 1 small pineapple, peeled and julienned
- 1 firm papaya, peeled and julienned
- 1 green apple, julienned
- 1 bengkoang (jicama), peeled and julienned
- 1 handful of bean sprouts (tauge)
- 1 handful of water spinach (kangkung), blanched
- 1 handful of basil leaves (kemangi)
For the Peanut Sauce:
- 200g roasted peanuts, finely ground
- 3-4 red chili peppers, deseeded (adjust to taste)
- 3 cloves garlic
- 2 shallots
- 1 teaspoon tamarind paste, dissolved in 2 tablespoons of warm water
- 2 tablespoons palm sugar (or brown sugar)
- Salt to taste
- Water, as needed
Optional Garnishes:
- Krupuk (Indonesian crackers)
- Fried shallots
- Lime wedges
Instructions:
Prepare the Peanut Sauce:
- In a blender or food processor, combine the roasted peanuts, red chili peppers, garlic, shallots, tamarind paste, palm sugar, and a pinch of salt. Blend until you get a smooth paste. Add water gradually as needed to achieve the desired consistency. The sauce should be thick but pourable. Adjust seasoning to taste.
Prepare the Salad Ingredients:
- Prepare all the fruits and vegetables as indicated in the ingredient list. Arrange them on a serving platter along with the sliced beef snout (cingur), blanched water spinach, bean sprouts, and basil leaves.
Serve:
- Drizzle the peanut sauce over the prepared salad or serve it on the side in a separate bowl.
- Garnish the Rujak Cingur with krupuk (Indonesian crackers) and fried shallots if desired.
- Serve immediately, accompanied by lime wedges for an extra burst of freshness.
