SPICY JUHU SINGKAH
Juhu Singkah is a traditional dish from Manado, North Sulawesi, Indonesia. It's a savory and spicy fish soup made with various aromatic herbs and spices. Here's a recipe for making Juhu Singkah:
Ingredients:
For the Fish Soup:
- 500g fish fillets (such as mackerel or snapper), cut into bite-sized pieces
- 1 liter water or fish stock
- 2 tomatoes, chopped
- 2 stalks lemongrass, bruised
- 4 kaffir lime leaves
- 2 tablespoons tamarind paste, dissolved in 1/2 cup water
- Salt to taste
For the Spice Paste (Bumbu):
- 6 shallots, peeled
- 4 cloves garlic, peeled
- 10 red chili peppers (adjust to taste)
- 2 bird's eye chili peppers (optional, for extra heat)
- 1-inch piece of ginger, peeled
- 1-inch piece of galangal, peeled
- 1 teaspoon shrimp paste (terasi or belacan)
- 1 teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1 teaspoon ground cumin
- 1 teaspoon ground black pepper
For Garnish:
- Fresh basil leaves
- Lime wedges
- Fried shallots
Instructions:
Prepare the Spice Paste (Bumbu):
- In a blender or food processor, combine all the ingredients for the spice paste and blend until smooth. If necessary, add a little water to facilitate blending.
Cooking the Fish Soup:
- In a large pot, heat a little oil over medium heat. Add the spice paste and sauté until fragrant, about 3-5 minutes.
Add Water and Aromatics:
- Pour in the water or fish stock into the pot. Add the chopped tomatoes, bruised lemongrass stalks, and kaffir lime leaves. Stir well to combine.
Simmering:
- Bring the soup to a boil, then reduce the heat to low and let it simmer gently for about 20-25 minutes to allow the flavors to meld together.
Add Tamarind Paste:
- Add the dissolved tamarind paste to the soup, stirring well. Let it simmer for another 5 minutes.
Add Fish and Seasoning:
- Carefully add the fish pieces to the soup. Let the fish cook in the soup for about 5-7 minutes, or until cooked through. Season the soup with salt to taste.
Serve:
- Ladle the Juhu Singkah into serving bowls.
- Garnish with fresh basil leaves, lime wedges, and fried shallots.
- Serve hot with steamed rice or rice cakes (ketupat or lontong).
