SUP KONRO - Traditional Indonesian Beef Rib Soup


 

Sup Konro is a traditional Indonesian beef rib soup originating from Makassar, South Sulawesi. It's known for its rich and flavorful broth made with a blend of spices and beef ribs cooked until tender. Here's a recipe to make Sup Konro:

Ingredients:

For the Beef Ribs:

  • 1 kg beef ribs, cut into individual pieces
  • 2 liters water
  • 2 stalks lemongrass, bruised
  • 4 kaffir lime leaves
  • 2 bay leaves
  • 3 cloves garlic, minced
  • 2 shallots, minced
  • 1-inch ginger, thinly sliced
  • 2 tomatoes, quartered
  • Salt and pepper to taste

For the Spice Paste (Bumbu):

  • 5 red chilies, seeded and chopped
  • 5 shallots, chopped
  • 3 cloves garlic, chopped
  • 1-inch ginger, chopped
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon ground nutmeg
  • 1 teaspoon ground cloves
  • 1 tablespoon vegetable oil

For Serving:

  • Fried shallots, for garnish
  • Sliced green onions, for garnish
  • Sambal or chili paste, for serving (optional)
  • Steamed rice, for serving

Instructions:

  1. Prepare the Spice Paste (Bumbu):

    • In a mortar and pestle or food processor, grind together the red chilies, shallots, garlic, and ginger until you get a smooth paste.
    • Heat vegetable oil in a pan over medium heat. Add the spice paste and cook until fragrant, about 3-4 minutes. Set aside.
  2. Prepare the Beef Ribs:

    • In a large pot, bring 2 liters of water to a boil. Add the beef ribs, lemongrass, kaffir lime leaves, bay leaves, minced garlic, minced shallots, and thinly sliced ginger.
    • Reduce the heat to low and let it simmer for about 1.5 to 2 hours, or until the beef ribs are tender. Skim off any foam or impurities that rise to the surface.
    • Once the beef ribs are tender, add the quartered tomatoes to the pot and continue simmering for another 15-20 minutes.
  3. Add the Spice Paste:

    • Stir in the prepared spice paste (bumbu) into the pot with the beef ribs and tomatoes. Mix well to combine.
    • Season with salt and pepper to taste. Adjust the seasoning if needed.
  4. Serve:

    • Ladle the hot Sup Konro into serving bowls. Garnish with fried shallots and sliced green onions.
    • Serve Sup Konro hot with steamed rice and sambal or chili paste on the side, if desired.
