URUTAN BABI - Traditional Balinese Sausage
Urutan Bali is a traditional Balinese sausage made from a mixture of minced meat (usually pork), spices, and coconut milk, stuffed into natural casings and then grilled or fried. It's a popular dish in Balinese cuisine and often served with rice, sambal, and other side dishes. Here's a recipe to make Urutan Bali:
Ingredients:
- 500g pork shoulder or pork belly, minced
- 150ml thick coconut milk
- 2 tablespoons grated fresh coconut (optional)
- 2 tablespoons fried shallots (bawang goreng)
- 2 cloves garlic, minced
- 2 shallots, minced
- 2 teaspoons ground coriander
- 1 teaspoon ground turmeric
- 1 teaspoon ground ginger
- 1 teaspoon ground galangal
- 1 teaspoon ground white pepper
- 1 teaspoon salt, or to taste
- Natural sausage casings (hog casings or sheep casings), soaked in water and rinsed
- Banana leaves or aluminum foil, for wrapping (optional)
Instructions:
Prepare the Ingredients:
- In a large mixing bowl, combine the minced pork, grated fresh coconut (if using), fried shallots, minced garlic, minced shallots, ground coriander, ground turmeric, ground ginger, ground galangal, ground white pepper, and salt. Mix well to combine.
Add Coconut Milk:
- Gradually pour the thick coconut milk into the pork mixture, mixing continuously until everything is well incorporated and the mixture becomes slightly sticky. The coconut milk helps to bind the ingredients together and adds richness to the flavor.
Stuff the Sausage Casings:
- If using natural sausage casings, carefully thread one end of the casing onto the nozzle of a sausage stuffer or piping bag. Gently push the casing onto the nozzle, leaving a few inches of empty casing at the end.
- Fill the casing with the pork mixture, being careful not to overfill or leave air pockets. Twist the filled casing at regular intervals to form individual sausages, then tie the ends with kitchen twine. Repeat until all the mixture is used.
Shape and Wrap (Optional):
- If desired, shape the filled sausages into coils or links, then wrap them individually in banana leaves or aluminum foil. This step helps to infuse additional flavor and moisture into the sausages during cooking.
Cook the Urutan Bali:
- Preheat a grill or barbecue to medium-high heat. Alternatively, you can pan-fry the sausages in a skillet or grill pan.
- Grill or fry the Urutan Bali until they are cooked through and golden brown on all sides, about 8-10 minutes, depending on their size.
- If wrapped in banana leaves or aluminum foil, remove the wrapping before serving.
Serve:
- Serve the Urutan Bali hot off the grill or pan-fried, accompanied by steamed rice, sambal, and other Balinese side dishes.
